If we are talking about jets....both Main and Pilot - I discovered a way to get out the really tight ones.
Use a flat headed punch - hold the carb in one hand or between your knees while seated. Hold the punch up against the bottom of the jet, and give the punch a couple of sharp wacks with a small/medium sized hammer. The jet should then loosen easily.
If you have damaged the screw slot then use the punch/hammer routine prior to trying a drill and easy-out.
