Stalls while riding +30 mph (x2)

I recently purchased a 2007 s40 boulevard (~9k miles. a few days after riding i took her out for dinner and on my way back, while riding at +30 mph it stalled out. It had trouble starting and I had to pull the choke out and figured it was a combination of the cold/low gas (though I only had to fill up 1.5 gallons of the 2.8 gallon tank). Fast forward 2 weeks and its about 55 degrees out and slightly misty/drizzle (barely anything) and the same thing happens. I had trouble starting it again as it wouldnt turn over. I left the choke out and started it and it got going. i filled up 1.8 gallons of fuel ( only drove like 80-90 miles since i filled up my tank) and made it home alright. I'm wondering if its:

(1)    spark plug is bad
(2)    petcock valve should be replaced with the raptor
(3)    weather related
(4)    clean the carb (i have seafoam, so i don't want to break it down yet without at least  trying cleansing)
(5)    possibly any other issue.

side note: air filter is new.

Easiest start.
petcock valve should be replaced with the raptor

If that's not it
Probably need to clean the carb.

I'm Seriously doubting it's the plug.

One really good clue is
Run it on prime.
If it runs that way
It's the Petcock.
There is a thread on troubleshooting the Petcock

My vote is number 2. If it was a dirty carb it likely wouldn't idle or accelerate smoothly.

Is it possible that I'm underloading the engine? the owner's manual says to be in 4th at 30 and 5th shortly after. i think that may also be an issue. I'm going to replace the raptor, i just need to find a container that can house the fuel as well as a funnel. i have the replacement, rubber plugs and zip ties.

But if I stall out at that speed, it shouldn't be hard to restart the engine right? Like it would explain me stalling, but it doesn't explain why its hard to  get it running again. Sharepoint?

It's the same story as a million other newb's.
Hey I was riding along and it quit and wouldn't start again for x minutes.
I had a half a tank... yada yada yada.

it's the petcock.

the only thing i am hesitant about with replacing the petcock is the vacuum line and plugging it. i have high temp silicone sealant and zipties, but i feel like i shouldn't jerry-rig this.

The Petcock doesn't pass fuel without vacuum.
Unless it's on
Prime.
If the bowl is empty the Petcock NEEDS to be put on prime.
Gotta be a reason for the
Prime position.
Vacuum drops as throttle opens.

Plugging the vac line is the easiest part of the  job. You can get a product from an auto parts store, sometimes called 'vac cap'. It's a little rubber nipple that pushes on to the vac port on the carb. You can get a pack of them for a few dollars. They come in different sizes. If I remember correctly, it was the 4mm version that fitted snugly.

I've had one on there for almost two years and it works fine. I inspect it along with my general maintenance checks. I also carry the rest of the pack in my tool kit, so if it eventually perishes, I have a replacement handy.

If you were lugging it to the point of stalling it, there would be serious protesting from the engine. You would experience a lot jerking and bucking before it stalled.

Engines should be rev'ed...stop babying it because...it's not a baby.

Most likely the petcock as others have indicated. I don't have the raptor, but I have rebuilt my stock petcock diaphragm a couple of times (you can buy kits for $20) due to the same symptoms.

Regarding the mileage, on average you can expect ~100 miles on a near full tank before you have to catch reserve, so if you are near the 100 mile mark when things start misbehaving you may be right there where you're starting to miss fuel because it's slipping below the level of the main supply tube.
