What is the pink stuff coagulating in the bottom of this Redline Engine Oil Break-in Additive?
Does it do that inside the motor as well?

Yep...mine does that as well.
I put the bottle in my ultrasonic cleaner with the heat on.....then once it is warmed up I give the bottle a shake until it is mixed again.
I contacted Redline about it, and they said it is some of the additives settling......they didn't say it was the actual ZDDP.
The bottles are never like that when they arrive - but I only use about 4 ounces a year......so a bottle lasts a long time.

Mine does it too. I just shake well and its all good. If it is cold I will sit in the sun just to warm it up a bit. Using the same bottle for 4+ years and never an issue with the bike so far, but the longest my bike may sit even in winter is 4-6 weeks.

I just don't like the idea of pink stuff hardening in the crankcase.

I assume that when added to oil in the engine the dispersion of it in a comparatively much larger amount of oil that the individual molecules are adequately separated from each other that they would not longer be able to congregate in sufficient numbers to make Pink Sludge...Or something like that.

Oil gets reformulated.
Hang on to it.
Put it in your wine cellar and turn it once in a while.
