Thanks for the feedback, that will help a lot for others who may need the longer cables.  When measuring them, and I did it about 10 times in various ways, I went a little on the long side just to be sure.  Better a few inches long than too short.

Those are 15" apehangers.  A set of 12" would be pretty close to halfway between the stock buckhorns and what I've got.  Probably be a lot more practical too.

As for the question...I'm 5'9" if I really stretch hard.  They put the grips a couple inches above shoulder level, I guess.  When I'm walking the bike out of the garage, I have a hard time not hitting my head on the mirror!

If I were to hang it, I'm thinking...3-4" round mirror, 8" stem?

Definitely the round mirror.

Though it may make it a little harder to ride, you may want to consider moving most of the controls off of the handlebars, or hiding the wires inside the handelbars.  I've got  good link for hiding the wires if you want me to dig it up... and lot's of ideas for outright moving the controls...

I like the long cables, too!

Nah, I like the long cables the way they are.  The nature of the seat and tank means that all my cables and wiring is relatively exposed to view.  The extra long cables round that out and complete the image nicely, I think.  Minimalist, everything hanging out, and no holds barred.  How a bike should be.

Seeing the latest pics taken from a side view, I can see where the throttle and clutch cables can be taken down a few inches.
