I stripped the hex out of the screw head. No wonder, they are installed with lock-tight. Any recommendations for getting it out without making matters worse?

If you are talking about the small screw at the center of the seat that fastens the rear of the seat to the fender.....they can get really tight.
The only thing you can do is:
Try cutting a straight slot across the screw and use a large flat blade screwdriver.
....or......
Drill off the head with the next size drill that you have above 1/4" and hope with the tension is taken off and you can then just thread the screw stub out easily. I think the screw may be stainless and it is easy to accidently round out the hex.

If you have a set of
torx
bits, see if you've got a bit that you can tap into the stripped allen hole with a small hammer. Sometimes that will grab it good enough to get it out. If the
torx
bit is hard enough it'll work kinda like an eze-out.

This is probably a stupid question, but are you using metric allen wrenches? I believe it's six millimeter. Don't ask me how I know this.

drill it out, put a set of my locking quick pins in for a tooless removal of your seat.
