i just installed the engine guard I bought from a member here.

I now what a set of highway pegs to go on that bar. So:

What is the size of the bar ( 1", 1.25", .75")?
What is a good but not expensive peg set to put on there?

I just what something I can strech out on during those rare longer rides.

Check out the Kurykyn Longhorn pegs, they'll bolt right on and are very adjustable.  Kind of spendy, though.
