Okay, I'll jump in
Year: 2002 (2nd engine)
Mileage:  31,000
Air Filter:  K&N stock replacement
Petcock:  stock
Main Jet:  152.5
Pilot Jet:  52.5 with bleed holes
White Spacer Mod:  filed down to 2/3
# Turns on air/fuel mixture screw:  approximately 1 3/4
Exhaust:  free-flowing (baffle-less) Dyna
Elevation:  approximately 1,000
Other Carb Mods:  n/a
Backfire:  Minimal on shutdown and coasting
Gas Mileage:  average 52-54
Smooth accel:  check
Spark plug color:  Usually white, but not checked recently

I like the way it's running right now.

Air Filter:  Original - Never cleaned(!)
Petcock:  Raptor
Main Jet:  Original
Pilot Jet:  Original
White Spacer Mod:  Not done
# Turns on air/fuel mixture screw:  1 3/4
Exhaust:  Original
Elevation:  6500 feet
Other Carb Mods:  None
Backfire:  Can get little shift pops if the engine is still warming up and I'm not using the choke.  Get a fart on shutdown about 80% of the time.
Gas Mileage:  56.5 mpg - 98 % urban riding
Smooth accel:  Yes, runs great!
Spark plug color:  I only check it about every 4500 miles or so...and the color must be normal, or I'd have taken note of it!

I'm happy with it!

Year:  1987
Mileage: 8,200 miles  (300+ miles since mods)
Air Filter:  OE paper type
Petcock:  Raptor
Main Jet:  Original
Pilot Jet:  Original
White Spacer Mod:  1/2 + (two stainless washers)
# Turns on air/fuel mixture screw:  about 2 1/2
Exhaust:  Original
Elevation:  4982 feet
Other Carb Mods:  None (use Seafoam every other tank)
Backfire:  None (med to hard decel pops.... a rare poof on shutdown)
Gas Mileage:  40mpg (100 % short urban riding)
Smooth accel:  Yes
Spark plug color:  Unknown (New - haven't checked since mods)

Petcock:  stock on prime, vacuum port plugged (raptor waiting to install)
Main Jet:  155
Pilot Jet:  55 with bleed holes
White Spacer Mod:  about half (1.5mm / 0.06")
# Turns on air/fuel mixture screw:  2
Exhaust:  Dyna
Elevation:  0-500 feet
Other Carb Mods:  replaced screws with stainless steel allen heads
Backfire:  hard engine braking, occasional throttle close, and shutdown
Gas Mileage:  50mpg
Smooth accel:  Yes
Spark plug color:  Unknown

Suspected minor intake leak, too.
