Do I really need to take the handlebars, brake cable etc. off to change the fork seals??

yes to the handlebars otherwise you won't have room to remove the top fork bolts, but you can leave the cables attached and just hang the whole arrangment from the ceiling out of the way. just unscrew the caliper but leave the brake line attached and hang that too. use a tie wrap or wire so you don't put stress on the brake hose.
i used 30 weight ATF fluid in the forks and while it's stiffer for sure the bike handles high winds way better.

I take my forks off without removing all that.
After removing wheel,caliper,and fender
(1)break fork bolt on top loose
(2)loosen pinch bolts
(3)unscrew top bolts leaving them in place in top tree
  I think it's alot easier,but thats me hope it helps

Seeing as I had to slightly tap the caps to push the forks down, ended up taking the handle bars off so I'd have room. I Actually marked the very top of the bars with a small line (permanent marker) so I could put them back exactly at the same angle (it was perfect).

OOPS, no one mentioned it.

Put a towel on the tank to keep from scratching it.  Things have a way of jumping out of hands.
