One thing that may have affected the temperature drop when I installed the flat top Wiseco - is that I coated the top of the piston, the valve tops, the exhaust valve stems, and the exhaust port with Cerakote thermal barrier.

I installed it in an effort to reduce engine temperatures - and also to see if the barrier could help to reduce the build up of carbon.

I have no idea how much affect this may have - but while the engine was being built it was something I wanted to try.

"Most recently I have installed the flat top Wiseco 95mm Wiseco piston."

Hey Dave, where did you get a 95mm flat-top?

Axman88, this old post provides a lot of info regarding installation of instruments to measure oil temp and oil pressure.  Those two parameters are most useful to me.  I also monitor cylinder head temp but IMO it is a value that is best used to monitor your individual setup.  As Dave mentioned, the head temp value varies greatly depending on where you install the thermocouple.  I have mine attached to the 8mm stud directly below the exhaust port.  The spread between head temp and oil temp is generally about 100F on my bike (i.e. CHT 300F, oil temp 200F).  Highest I have ever seen my CHT is about 360F.  Highest I have seen my oil temp is around 245F.  IMO, the optimum instrumentation is oil pressure and oil temp.  The old post has details on how to install.  It also has a lot of general info on the oil system.
