When holding the lever after pumping the brake and opening the line, the lever sinks to the bar..... I don't remember this being normal. Is this normal?
Yes, that is normal. When you open the line, there is nothing for the lever to push against.. so it goes all the way to the bar.
The less air in the line, the firmer it will feel as you pump the lever.. but it will still go to the bar when you open the valve.
