I believe research on the topic, will show you, the Majority use Elect, just not off the grid.

 I would say the majority of Amish utilize electricity, however the majority of Traditional Amish do not.  I didn't really clarify traditional versus majority, just as I did not clarify majority Mennonite from Old Order Mennonite when describing vehicle usage.  

 I think at the end of the day each group just makes it up as they go along.  The bikes don't seem to be a big deal, I guess because they aren't considered a necessity item and they could always just go grab a horse.  The comparison to motorized vehicle environmental impact seems pointless as their only other option would, typically but not always, be a horse.
