I'm going to attempt to remove my gas tank one of these days, and I was wondering what the best tool, technique and any tips anyone has for removing the electrical jack on the gas tank might be. I read the tech section on it. Thanks!

Mine simply has one cannon plug/multi plug, and the speedo cable. I disconnected the speedo cable on the engine side, and once the tank is emptied and unbolted, just lifted it off. The multi plug came apart easy with no tools - lifted the little plastic tab, and pulled it apart.
While you've got the tank off, recommend you clean the other multi-plugs along the backbone. The one for the lights can go intermittent due to dirt/vibration. I cleaned them out with electrical contact cleaner and pushed a little dielectric grease into the female sides before closing it all back up.

Prepare a place, elevated and soft, before you have your hands full of tank with a speedometer cable hanging.

If you remove the speedo cable at the motor , which is the easiest ,be careful you don't loose the O-ring seal ,and cover the area with a rag when removing or replacing the cable , the O -ring tends to fall out and slide down (the "rabbit hole")under the starter,or gets lost on the floor.

Don't worry about losing it down the rabbit hole, a short blast of air will send it to the other side of the garage.

No.
Getting it up at the rear and getting the Petcock past the tank is sometimes a pain. I used to have to slap it pretty sharply to lean it enough to get it past.
Some people just pull the Petcock, so yeah, best drain before you do That, but I didn't. I would not want it too full for sure.
