In my estimation, grilled chicken (or baked chicken) requires a sealing sear on both sides and then a dwell time until approximately 1/5 of the water and chicken drippings have exited the grilled meat -- a slight shrinkage and an increase in meat density that goes along with getting tender and "done".

Then tear A BIG PIECE apart at the joint to see if the joint section is cooked all the way to the bone  ---  the joint should give fairly easily with no trace of pink  ---  this final test separates done bird from "still cooking" bird.

A little overcooked is much preferred to a little undercooked when talking poultry.   And the meat should be served hot off the grill .....

And this too is why the wings get done and get eaten long before the main pieces are completely cooked.

It is also why breast meat gets overcooked and gets dry so frequently -- it does not give a lot of visible signs that it is overcooking like dark meat pieces do.

So I've got a cookie sheer that barely fits in a standard oven , it also barely fits in the smoker.  The smoke4 has 5 shelves . so if  a cook was to but wings on the top rack , Brest strips on the next shelf , leg quarters on the next shelf , and hassle-back potatoes on the bottom two shelves ...then that should feed 10 people for two days ! ☺

I will bring a couple of the deep aluminum pans like this one (new) so we can ease the clean up chores by tossing them when we are done.    Or if you like them, wash them and use them again.


Hey, once used a few times they make a great drain pan to change the oil in your bike.

I spent 18 months in Elpaso .    Long enough to see a few sand storms come and go ..  Wink

Sand is good with peanut-butter ya know !

I kind of wanted to stay there in stead of returning to Tn.   Roll Eyes

The nice thing about sand in your food is ya don't hafta chew as long. It's like having a buncha tiny little teeth in there helping.
Downside is
It's gritty.

We are 3 weeks and a bit out from the trip.

THOSE GUYS THAT ARE TRUCKING IT IN --- DO YOU HAVE A LARGE ICE CHEST YOU CAN BRING WITH YOU?   Not only do we have to store some meat on ice but we also need to have a way to ice down your favorite beverages.

JOG has said he can't drive or ride due to illness, so I guess that means he isn't coming.

How about the rest of the invited folks?   Have you contacted Hammer and the rest to remind them about the trip?    Did you remind them to bring a folding chair and THEIR HEARING PROTECTION?

Change in plan, I am bringing the smaller Savage on the trailer.    Loading and unloading by myself has become a factor with my enfeebled legs, hip and back, so I am going lite with the bike.

Hey there oldfeller. Sorry about all those aches and pains. I have to admit I was using the back massager last night cause I've been in a bit of pain this week also. Anyway, I actually spoke with Hammer just yesterday and he is definitely still in. I do not believe I will try to haul a folding chair 800 miles. If needed I am sure I can buy one at a Walmart near MM's. I will bring my plinker and ammo just like I did at Lancer's. I imagine Steve will bring his cannons also. See ya later, alligator!
