'NDUJA (pronounced 'n ḍo ya) It's a spread or a hot sausage made ONLY with ground chili peppers, olive oil and a little bit of ground pork meat and pork fat.
http://www.nduja.info/en/Traditionally it was a "poor man's winter sausage", and you would slice it or spread it on bread.
It goes down wonderfully with chilled White wine. Red wine and hot chili peppers is a no-no, as the wine becomes bitter
Southern Italy has made hot cuisine a culture and an integral part of its own Heritage.
