I know how fast I'm going by the sound/feel of the engine. Since the speedo is impossible to use safely with a FF helmet, I've developed my own technique to know my speed.

There's no "dealer trick" for finding 5th gear. She's almost completely distracted by the process of finding something that is just "there". Yeah, I don't want to speak badly of someone I don't enough about, but it seems strange you wouldn't just find 5th gear by normal use. Occasionally on the highway I'm not sure if I've gone to my highest gear so I pull in the clutch a little and press up on the shifter. Scary there's folks out there riding who don't know enough about their bikes. Like how many gears it has Huh
