Lets look at a ‘cattle drive’, in the late 1700’s early 1800’s.
A person, has a group of cattle. Raised them, fed them, and now needs to sell them.
Some, ranchers have large herds, to they are all one brand.  
Some have smaller herds, so they join together, and separate the brands at their destination.
Now, big or small,  the owners, ‘Hire’, people who know the path.

Those, Leaders, hire, hands,  (Mostly Young people).  They Know, it will be a grueling job, (Several months, grueling territory  hostile people which want to steal the herd, all sorts of weather situations.  A ‘ job’ , which will,  ’Separate the Men from the Boys’. Which requires a certain amount of people to finish the job.   So they hire more than they Need, (because they know, ‘boys’, will just ride off).  

In this arduous Journey, do they loose some  workers, due to Hostile people, Accidents, etc.  Sure !  Do they loose cattle to the same things, Sure!  (But they don’t Just  ‘GIVE UP’, the whole herd, when some hostiles come along),  they  Fight for it.

Now, Drive is over, the, ‘Boss’, (or his agents), Pay the workers. They make money, the  Boss makes more.

Now, one, ‘leader’,  Knows the route from A to B.  They Know of the Pitfalls, and how to avoid them.  BUT, they are well known, for, ‘Arranging’ a, “Ambush”, along the way, ‘loosing’, a Bunch of the herd,  (Not most, but a  Bunch),  Just enough to insure a good payment, from the, ‘Ambushes’, for giving them information, when where and how, to Ambush.  But not so much, so Next year, they can’t get another Job, driving a herd,  from another Rancher, who has  NOT, checked.

Another, ‘leader’, has proven to be resourceful, in other endeavors. He does not know  the route from A to B, or some of the pitfalls along the way.  But, that Person,  HIRES, people, that Know the Route, and All the Pitfalls.

Which person, would  YOU  Hire, to drive,  YOUR  Herd ?

Well I relate,  Hostile people = cattle rustler.

Also, relate, 'Cattle Rustler',  with,

do you know what its like to make a steer?
have you ever branded anything?

I’ve fallen off more horses than any of you have seen.
Fallen off a few, Never rode to any extent, Never owned one.
Took care of many, when friends went on Vacation
(Although, a Friend had a girlfriend, we would go to their place,  He in the hay mound.  Me with the much younger sister, and she taught me to, ‘Post & Jump’.)

Banded, Pinched and Cut, MANY !
Also Dehorned, and took care of 4-6 Bulls, Before AI was popular.
(Dad would rent them out to local farmers)

 Deer, Shot, Gutted, and butchered, probably only 150 in the last 50 years.
Beef, when I was a Kid, twice a year, Dad would buy a Cow, we went to a little Butcher shop.  Dad would hit it on the head with a bullpen hammer, Hoist it up,  Cut the throat, I collected the blood. Then he and the butcher, gutted, skinned, quartered it.  Then hung it in the, ‘aging’, cooler. Two weeks later, went up, and it was My Job to clean the ‘fur’ off the quarters, wash them, then Dad and the Butcher, cut up, and sharp froze.  Week later, pick up the packages.  

But,  “What Does It Matter”
Guessing you WANT, to hire the person that does:
 ‘Arranging’ a, “Ambush”, along the way, ‘loosing’, a Bunch of the herd,

Sweetbreads:  Growing up, didn’t know what it was. But it Tasted good.
 (Have not had any, of any variety for about 35 years,  I Heard that Hillary,  BANNED them)
Prairie Oysters: Again, didn’t know what they were until about 18 or so. They also tasted good. (Still Do).
Haggis: First time I had that, was early 70’s in the UK, Liked it, then found out what it was.  STILL  Like it.

Head Cheese,  Swartzcup, (as we learned the name from Grama, 'old German'. But for others looking this up, Schwarzsauer). Pig Brains.

Knew  Exactly where Liver, Gizzards, Heart, from wild Ducks/Pheasant & Domesticated duck & chickens came from.  Love them
Knew exactly where the Boiled Heart/Tongue came from.

But the Absolute  Best, (and stills is):   Pickled, Venison, Heart and Tongue.
Also the Liver. On a  Older Buck,  just the lobes cut off, on a  Doe, or Spike, the whole thing. Pealed, Sliced and fried.
  (And new exactly where they came from)

So,  Thumper, clone.   You asked, and now know, about my experience with Beef.
You did Not ask, (but I gave it it you anyway), my culinary tastes.

Do you now, want to know my, Political Beliefs?

Just,  Guessing Yours.
