Kris, I'm not a welder... but my dad kept mom and us kids fed for many a year being one. He, back before his eyes went to Hades, could edge-weld two sheets of 20 thousandths stainless. Yup, two hundreths of an inch, and he welded a lot of it! I've seen one other guy I know weld two sheets of aluminum foil together... just to prove it could be done.
So, there's pros, and guys who think they're pros...
Or it could be the difference in welding machines. Dad used a TIG a lot. Not fast, but there is nothing you can't weld with a TIG. Aluminum, steel, stainless, titanium, copper, magnesium (yes, it can be welded, you just gotta do everything right) and a bunch of other metals I can't remember. Your guy may not have access to a TIG...
