Does anyone know of a two or three piston brake caliper that will work with our bikes?  I know that anything can be made to work if you do enough modification, but I am looking at something not too difficult to switch to.

Best bet is some of the earlier Honda and Suzuki multi-piston units. If you have access to a bike junkyard you'll find one that will fit. I THINK early Katana units are pretty close, but it has been years since I worked in the bike biz.
