A 160/60 is also gonna be 2" shorter than the stock 140/80. That's a significant difference. That's a scooter tire, leave them for the scooters.

Last Q, I think, so what tube will I be looking for on new tires? It would depend on the size of the tire? Or are all tubes for 15" wheels created equally? What about the valve configuration? And where do rim strips come in? Are they needed?

You will be looking for a tube to match the tire size. Some tubes will work on tire sizes close to each otherm but in general the size marked on the tube should match the tire size.

Valve stem configuration is somewhat a matter of choice. The straight stem may look better, but is harder to get to for checking. Many like a right-angle valve stem, mounted to point to the right (side opposite the pulley).

A rim strip is essential. It is a strip of rubber that lies in the "valley" between the beads, and it forms a barrier between the spoke nipples and the inner tube. It protects the tube from being chafed through by the spokes. The rim strip will have one hole in it that lines up with the hole in the rim for the valve stem.
