I heard of one guy doing something like this for bulky items too large to put in his little cheapo Harbor Freight blasting cabinet.
He set it up just like you describe, but he worked the parts inside a large cardboard box,... something like a wardrobe box that he stooped over into to work the larger parts.
At the bottom of the box, he cut a hole and inserted the hose from his shop-vac, so the airborne soda particles would get sucked into the shop-vac.
He said it worked okay except for two annoyances:
-- 1. His "friends" made fun of him for the low-rent tackiness of it all,..
-- 2. The shop-vac got clogged up every ten or fifteen minutes or so, requiring him to stop what he was doing to clean out the filter. I think he also said that a box of baking soda didn't last all that long anyway, so the cleaning of the shop-vac filter only increased the annoyance somewhat.
It DID work, though.

My plan if I ever need to do this would be to hang a clear plastic sheet from the ceiling. folded to form a tube and tape the edge. The hanger at the top will hold it open and provide for exhaust thru several layers of material. The bottom will be untaped and you'd pass the part and blaster from the bottom. Drape it enough so that you can fold it over for closure. And a pan to collect and dispense the media. Hold the part and the gun thru the plastic sheet.

My ride is a 2005 LS650, customized with ISO grips, cone air filter, stage 1 jets, Jardine exhaust, solo seat, AM turn sigs, and a catseye tail light. Next year, custom paint job (hopefully)!
