Did you try it on prime ?
That would sure seem like the vacuum operated petcock not opening very far. Look for a vacuum leak.

The idle mix screw adjustment is never the problem at hi speed running.

The cable is probably the comrpession release?? Huh

You have all these mods and you haven't rejetted?
I'm surprised it runs long enough to get it 5th gear.

The 1st 4 bullets will make it run incredibly bad on stock jetting.

IMO, I think you have a main line fuel restriction problem, other than too small a main jet. Or at least I've never known a lean main jet to cause an engine to "die".
I'd suggest you find that problem first,.....before modding the carb.

I use a 152.5 main and just recently went back to the stock 52.5 pilot due to flooding issues after changing muffler styles. They are really cheap, 2 - 3 bucks apiece. Just ask for a range of jets to try for a mikuni carb.

Have you tried reducing the amount of air coming into the motor? Do you know what size jets you are running now?

There is no 5th gear on a 98, they didn't put in a 5th gear until 2005.

Gotta check that you have three things: air, fuel, and spark. the last one isn't really an issue, at WOT the other two are more likely to be at fault.

so, check that at WOT your bike is getting just the right amount of both. Check that you have adequate fuel flow from gas tank to carb and carb to engine (petcock to prime and jetting).

There is also the chance that your air filter is all nasty and gummed up, so take it out and clean it (blow air throw it backwards).

hm, all that being said, make sure it is actually a WOT thing and not a gear things. open the throttle up all the way in any/every gear and see if the same stuff happens. if it does, then it is a fuel/air issue. if it doesn't....  Huh

forgot to add:

check your spark plug.
pull the plug and look at it. the color will tell you which way you need to jet, based on where in the throttle the bike last was (over the past few minutes) before you shut it off. white = too lean, dark/black = too rich.

you'd have to ride it for a good bit of time at WoT though, and with it bogging down it wouldn't be fun...
