So assuming I ride it well and its more or less tuned what is the best time i could expect to get from 0 to 60 mph on my stock 09 S40?

Yup,... high 6's to low 7's stock, easy...
In the 5's without major mods, just jetting muffler and air filter, minor exhaust porting...
Below 5,... needs real effort...

0 - 30 or 40mph... we do very, very well....  you can get the jump on some crotch rockets... unless they're very good...
