You will properly tighten them with the proper torque's value, right? Sure hate to see a cracked exhaust manifold  :'(

Yes and yes.LOL

A while back I installed a 4 into 1 exhaust on a KZ750 and them header bolts were a PITA to come off. I learned a good lesson on not using anti-sieze.

If so, my last good brain cell is telling me there might be a problem using a stainless steel bolt screwed into aluminum.

Is there a concern there (galvanic corrosion?), or am I just totally OTL (again!)?

You got the same problem with the stock bolt.  Just apply the same anti-sieze you would for the stock bolt.
