From the second video its an in-line twin. From the first video you cant see much of the engine but from what you can see its clearly not an S40/LS60 side view of the motor.
Duel exhaust would be cool though
I really wonder if someone could squeeze a small V-twin in one of these frames.

Definitely a single. I say the lump's a Yamaha XT600 / XTZ660 by the looks of lower right corner of crank case and starter/lightened sprocket cover on the left side.

Dual exhaust would be cool, but I think I would put one pipe on each side of the bike so I could be thumpin' in stereoooooooooooo...........

Now that would be cool, run a short pipe off the head into the Y and split the exhaust then run the pipes to either side of the bike. Shoot the whole thing rattle can high temp flat black to "hide" it.

From the front on second video looks to me like see 2 header pipes like a twin

Since you'd be running dual pipes, you could actually run smaller 1"-1.25" pipe from the Y to the mufflers for a combined diameter of 2"+. I know it's not quite that simple but you get the idea. Smaller=easier to do.
