Lower Front Forks -How much???

I love the larger tires and the 11.5 " progressive shocks (should have gone to the 12.5 "). The stability on the freeway is great and grooved concrete is no longer white knuckles. However, around town the steering is slow. I need to lower the front forks to get the steeering back. The big question to those that have played around with the forks is how much? I was thinking one inch and not cut the spacer to tighten up the forks. Would you also go with 20 wt oil vs regular fork oil? I am a larger size rider (6 ft and 250 lbs). Thanks for any inputs!!
