as far as I know they affect the how fast the vacuum is applied to the diagphram, affecting the lift of the slide.    I have never messed with these jets but if you install for example a Dynojet Stage 3 on a set of flat slides like on my streetfighter they have you tap the two holes in the bottom of the slide.  Then you screw in a "corrector" in each one.  they then say for racing or hard street riding remove one of the correctors for "better acceleration"

That leads to the question of what creates better acceleration?  A faster moving slide or slower?  Theoretically if you change the speed at which the slide rises you would change your fuel mixure during that transition time.  For example the two extremes are the old straight pull slide you can wack open and almost kill an engine due to being too lean or the oposite end is a standard CV carb with a diaphram you can't open it any faster than the incoming air allows (barring mods like you are talking about)
