One good thing to come out of coronavirus lockdown is I added two new dishes to my repertoire of things I can cook good. Cajun red beans and rice. Yummy! I'm now a master of it! Southern smothered pork chops. Still working on it but getting there! The trick with red beans and rice - bacon grease! |

Most people love spam as long as they don’t know it’s in there. I don’t tell them unless they ask. Slice bout 5/16 or 3/8” over low coals with your favorite wood chips,turn frequently. My wife’s ham hocks/shanks with black eye peas with corn muffins is to die for , A Kings Meal. Hey honey ya know what sounds good........ |

Probably not much different than using spam I put leftover barbequed steak and hot sausage in this week's batch. So far I think my favorite meat combo for red beans and rice is leftover pork chops and hot sausage. But yeah the beans and pork thing is a good match whether ham or pork chops. Good eating! |

Good choice! Which reminds me I also learned to make tomato sauce from fresh tomatoes my old lady grew in her garden. Seasoned it with herbs from the same garden. Now I cringe at the thought of sauce from a jar or can. But sadly, it seems the tomato vines are tapped out for the season. |
