Planning a couple of 500 mile trips to get accustomed to my long trip in October.

What as a minimum should I carry in my saddle bags?

A "good" set of tools, not the crap you get with the bike.
Duct tape and zip ties. If it can't get fixed with a lil' duct tape and a zip tie, you in a heap of trouble.
Rain suit, ball cap, sweater or jacket, long underwwear or sweat pants, for under your protective clothing for sudden temp changes due to alltitude or darkness.
A flashlight for roadside repairs in the dark, like replacing a blown fuse.
Fuses
Flares so you don't get run over whilst making said roadside repair in the dark.
A good knife.
A gun, in case the knife didn't convince 'em you was serious. ;)
Water and some non-perishable food, like granola bars, for being stuck on the side of the road at night.
Sleeping bag, in case it becomes a really long night on the side of the road. :)
Bungee cords.
Frist aid kit.
Quart of oil.
Spare oil filter. In case it's a really, really long trip. Oil you can get almost anywhere.
Spare spark plug, and the tools to properly set the gap and install it.
SUNSCREEN
Sunglasses
Bandanna, a little water on it, tied around your neck will help cool you off in hot weather.
Map
Water-proof matches, coz you just never know.
Cell phone. Don't forget your charger!
Can' think of anything else at the moment. Have a great trip! And I'm serious about the sunscreen. :)

A towel.  It has 1001 uses.

I keep a "bug-out" bag in/on whatever vehicle I'm using.  Usually a normal sized back-pack, but everything would fit in some medium size saddlebags and a small backpack.

-Hydration Bladder, 3 liters water
-Pistol and 50 rounds ammo
-Tactical Folding knife
-First Aid Kit
-Space Blanket/ half a tarp
-Microfiber compact camp towel
-Compass/GPS
-Water Purification tablets
-Power Bar energy snacks
-Emergency cell phone charger
-Flashlight & extra batteries
-Sunscreen & Chapstick
-Hand Sanitizer
-Toilet paper (camp roll in plastic case)
-Lightweight Goretex rain gear
-Polartec fleece jacket & beanie cap
-2 Pair extra boot socks
-Duct tape/Electrical tape
-Snare wire
-Zip ties
-Pocket Bible (or alternate material)
-$100 cash in your boot/traveler's ankle pouch

And of course on the bike I have my tools, fuses, spark plug, etc, in my fork bag.  Take oil, too.  Good luck & Stay Safe!

I kept stuff for the bike in the bags. Personal stuff went in a waterproof duffel (Like for Kayaking) on the back seat.

In the side bags

Motopump kit
Rainsuit (frogtoggs)
1 QT OIL.
Headlight bulb
Toolkit
zip ties/bungees
Extra gloves (get liners too)

I really liked the motopump kit.

OH, and install a cigarette lighter socket wired directly from the battery!!

He did say "minimum". He also said he was going on a couple of 500 mile trips. That's what I would take on a 500 mile trip, minimum. Call me over cautious, I just hate surprises. ;)
OH! Add a tire repair kit with Co2 inflator to the list.

stove (tuna can with rolled up cardboard and parafin in it). Mess kit. Some sort of food to be cooked. Lighter. Spare headlight/taillight/signal light. Travel hammock. Blanket/sleeping bag. 10x8 ft blue plastic tarp. 1 liter Nalgene bottle. Long underwear. Cash/card. Tube patch kit and tire irons. Factory toolkit. Quart of oil. Knife. Electrical and duct tape. Smokes. Flask.
