Does anyone have an Idea how I could get 7/8" bar end mirrors to attach to the stock 1" bars? Im thinking about drilling a 7/8" hole in the weights and trimming the extra 1/2 inch of the bar off the end. Thoughts??

If you could live with the extra narrow bars... sounds like a plan.
To get the holes in the center, I would make spacers to fit the bars and whatever drills you plan on using.
But then you could just make the spacers and leave them in, drill if you need to make it deeper.
Get somebody to put a couple of tack welds keep them in place.

Wrap the bar end mirror in a piece of inner tube.. that will keep it tight and cut down on vibration.

over 4"
if you take the grip off, you'll see 2 divots where it's welded to the bar.
