I pick the one on the right , the other two will have you pushin instead of riding cause the jiffypop is just about ready !

The marks on the left and center ones are not depressions but little peaks, thus the popcorn reference.  I have seen some with a few of these but these 2 have a lot more.  There was a 3rd but it was so bad that eruptions had developed and the stuff inside was coming out.  It was like large granolas of sand/rock.  It seems that before the little peaks were covered by the rubber holder that was on the unit and I just did not see them.
Typically, when I remove this unit from a bike I don't look behind the rubber and so very likely overlooked the damage on the bikes.  Is there something that can be done to prevent this damage ?  Something to look out for ?

S'not damage, those little bumps are electrical components.
They pour an encapsulation resin over the top of a board and depending on the height of components you see them or not.

Now if you see a volcano... that's damage.

Usually after the pour the module is placed in a vacuum chamber to pull any air bubbles out of the resin. It's in this stage that you get the most uneven results as the amount of residual air in the resin and the vacuum chamber pressure vary quite a bit. A place I worked at we used to leave the potted modules in the vac for 2 hours to ensure better uniformity but most places rush the process and don't give enough time which can lead to ugly resulting surfaces.
