Just out of curiosity, I was playing with the pocket tuner to figure out what jets it said I need. I trust you guys waaaay more though!

I seems to me that if you set the temperature then the altitude adjustment will be off and vice versa. Am I reading this wrong? How would you determine altitude AND temperature correctly (ex. 0' ASL and ~70°F)?

you do one then the other

example, I'm at 500 ft at 80°, I go to big bear at 7000 ft at 60°
for -20° you'll drop from a 150 to a 147.5
so you would need to shift the scale to read 147.5 on the altitude scale.
for 7000 ft you drop from a 147.5 to a 137.5

that's of course you're racing around big bear.
if you're going to big bear, you just go.   8-)

I actually printed out that pic to attempt what you're saying!  ;D

It makes sense now. So the chart doesn't actually tell you what size jet you need. It's more of a tuning aid if you change altitude/temperature. It assumes you're already jetted correctly. That chart won't do you any good if you're trying to figure out how to correctly jet your carb from stock considering everybody's bike comes from the dealer jetted the same regardless of altitude or temperature differences.  ;)
