Torque is your friend, especially for a short acceleration burst like in the video.

Also, the sportbike guy may not be able to use all his power without experiencing excessive wheelspin or a wheelie.  The long wheelbase of the chopper is another advantage.

I am more than certain that Hildo's ratbike chopper has forged pistons, a racing cam, and whatnot...

Notice how he can spin his rear while SITTING on the bike...

Also, if I am not miskaten,. he shifts into first gear... UP!

That, ladies and gentlemen, is a racing gearbox (1st up, all other gears down).

Hildo's ratbike is a wolf in sheep's clothing...  ;D ;D ;D

(And, I wouldn't be surprised if the Fireblade's 1st gear was long legged as 2nd/3rd gear in the Harley...
The BOY never stood a chance, and Hildo knew it...  8-))
