I am planning to replace my stock grips with the ISO ones.  Will appreciate any tips or gotchas I should keep in mind. Also, what type of glue is used on the handlebar to keep the grips in place?

Rubbing alcohol to remove and install... you can scuff the chrome with a file for better grip/ or if it won't stop slipping, I just use some contact cement...
They do sell grip glue...pfft!.. any old glue will do, except wood glue.....

If you are talking about the kuryakyn iso grips, DON"T use the glue they provide. It sets up way too fast to get the throttle side on all the way. I will put a single wrap of electrical tape on the clutch side and the throttle side is usually snug enough. I have used good ol hair spray to hold iso grips on with out any problems.

It helps to loosen the throttle cable barrell adjuster to install the right grip. Don't forget to re tighten when you are done.
