Do you have to remove the assembly, or can you change these from underneath just by removing the bowl?

It looks like there is enough room...but I don't know if you'll be able to see what you are doing or not.  Waiting to get my main jet tool and so I'm just curious.

Yes you can ... but not if the phippips screws are stuck ...

I usually replace the phillips screws on the bowl with stainless allen head bolts, and you can yank em anytime and clean and swap jets ... unless the jets are stuck in there ...

With my vm carb I can loosen the clamps that hold carb in boots and spin it around to gain access to the jets easy. If you disconect the throttle cable maybe you can spin it in place, make it easier if you can.

   I replaced the fuel bowl with allen bolts,I f I take the bowl off again I will replace with phillip screws their a lot quicker to take off you can spin the screwdriver.

I got allens, and a cheap set of L-shaped allen wrenches with the ball-shaped end on the long strech of the "L". Those do the job even under slight angle and you can spin them easy. Got them in a chinese shop, like Dollar-tree in US.

DOH! Why didn't I think of that.  Spent several hours yesterday trying to get the screws out, loosening the top of the battery box, trying to finagle the bowl past the battery box, etc.. but it can be done.

I have managed to get the entire carb out only removing the gas tank

I dont know if its good practise but i remove the clamps on each end of carb, then i bend the rubber on the backside of the carb back so it gives a few inches to wiggle the carb off the engine.

Eventually im sure the rubber will crack or something but quick carb removal.

I wont tip the carb if I were doing it, all the crap in the bottom will get into the jets ... OK fine you're replacing the jets ... OK bad example.
Also wiggling the airbox boot is OK it should take a little bit of that just fine.
Also you can replace the manifold to engine bolts with hex head and simply unscrew those and remove the carb with the manifold if you're removing the whole thing.
In fact a virago 1100 has to be removed with 1 manifold still attached ... once again who thought a V twin was the logical way to add displacement. Probably the worst way to add displacement.
