I've noticed that my rear tire sits much closer to the left side of the fender. Is this normal? The tire is the standard size and the according to the reference marks at the adjusters it is sitting even.

Yep, normal. If you were to put on a way larger tire you'd have to center the tire in the fender well by cutting on spacers and adding washers.
